Healthy muffins: corn, banana and spinach in under 25 minutes

This has been a winning recipe with my one-year old baby girl and with any adult that has tried them. These muffins are very simple to make, are low in sugar, cheap, nutritious and so yummy. Need to say more?

Ingredients
100g of sweetcorn
2 large handfuls of spinach
2 ripe bananas
2 eggs
100ml rapeseed oil + extra for greasing
160g self raising flour
1 tsp baking powder
1 tbsp chia seeds- optional
Directions
Preheat oven at 180ºC
Blitz the sweetcorn until rougly chopped into smaller pieces in a food processor.
Put the spinach, eggs, bananas and rapeseed oil in a blender and blend until perfectly smooth.
Put the flour and baking powder in a mixing bowl and whisk together to combine. Pour the wet mix into the flour along with the chopped sweetcorn and fold toether in as few moves as possible - try not to overmix.
Lightly grease a mini muffin tray (or ramekins). Spoon the mixture in there, sprinkle some chia seeds if using, and bake in the oven for 12 minutes or until risen and cooked through in the middle. Leave to cool
